Chocolate and Craisin Focaccia

I had been thinking about a chocolate and craisin cookie recipe, but Doug requested chocolate chip cookies after I had already started to plump up some craisins. So I put the craisins in the refrigerator yesterday, and made up a Chocolate and Craisin Focaccia today.


 

Ingredients:

  • 240 gr sourdough starter, fed or unfed
  • 240 ml lukewarm water 
  • 70 gr brown sugar
  • 2 teaspoons instant yeast
  • 320 gr All-Purpose Flour
  • 50 gr cocoa powder
  • 1.5 teaspoons salt
  • 2 tablespoons nonfat dry milk
  • 113 gr (1 stick) melted butter
  • 1 cup craisins, soaked overnight (about 130 gr before soaking, about 170 gr after soaking)
  •  170 gr chocolate chips
  • 1 tablespoon sparkling sugar (big crystals, such as sugar in the raw) - optional

 

Instructions:

  1. Combine starter, sugar, and water in stand mixer bowl. Mix in yeast, and let proof for 5 to 10 minutes.
  2. Whisk flour, cocoa powder, salt, and powdered milk together.
  3. Stir in melted butter into yeast mixture,
  4. Knead in 1 cup of flour mix at a time into the wet ingredients.
  5. Knead for 4 minutes to make a smooth, soft dough.
  6. Place the dough in a lightly greased bowl, and let it rise for 1 hour. 
  7. Cover the bill and chill overnight in the refrigerator.
  8. The next morning, transfer the dough gently onto a large well-oiled 12 x 18 half sheet pan  that has been lined with parchmeng paper and lightluy coated in cooking spray.
  9. Let the dough warm up and rise for couple of hours at room temperature until very puffy with many bubbles over the surface.
  10. Toward the end of the rise preheat the oven to 375 (fan) or 400 convection.
  11. With wet fingers, make dimples all over the surface. While doing this, push most of the craisins and chips down into the dough.
  12. Optionally, sprinkle dough with sparkling sugar. 
  13. Bake for about 25-30 minutes
  14. Remove from oven, let cool for 5 to 10 minutes on a rack.
  15. Using a couple of large spatulas, move the bread from the pan to a cutting board. 
  16. Slice into 3 x 3 inch pieces. (Depending on size, makes about 24 pieces)
