I wanted to make something quick this morning for Doug to take into the Property Committee Work day, and they were going to prune roses, so I wanted something with red. I made just-in-time Berry Scones!
Ingredients:
- 375 g (3 cups) all-purpose flour
- 1 tablespoon baking powder
- 1/2 teaspoon salt
- 100 g (1/2 cup) granulated sugar
- 113 g (1 stick) butter, cut into ~1/4" chunks
- 1 large egg
- 200g (3/4 cup + 2 tablespoons) Greek yogurt
- 1/2 tsp vanilla extract
- 144 g frozen strawberries, chopped into 'blueberry' sized pieces
- 100 g frozen mixed berries, chopped into 'blueberry' sized pieces
- 100 g (1/2 cup) sugar for rolling
- 1 to 2 tablespoons milk
Instructions:
- Preheat oven to 375°F. Line a large baking sheet (13" x 18") with parchment paper or Silpat.
- In a food processor, mix all the dry ingredients together.
- Add the butter chunks to the food processor, and pulse in spurts until the mixture is crumbly with some small butter clumps.
- In a small bowl, whisk together the vanilla, egg, and Greek yogurt.
- Add the wet ingredients to the food processor bowl, pulse a couple of times until the mixture just comes together and forms clumps.
- Sprinkle your work surface with about of the 1/4 cup 'rolling' sugar.
- Pat dough out into a ~ 9" x 15" rectangle about 1/4" thick. Sprinkle with additional 'rolling sugar' to pat out.
- Sprinkle the berry chunks over dough.
- Using a bench scraper, roll the dough into a log, pressing it together if cracks form.
- Cut the dough into ~16 wedges.
- Place the wedges onto the prepared baking sheet.
- Separate the scones about 1".
(My wedges mostly fell over - you might also just lay them cut side down). - Mix the leftover 'rolling' sugar in 1 to 2 tablespoons milk, and brush
over tops of wedges.
(I mixed mine in the bowl I mixed the yogurt/egg/vanilla in, and mixed in the remainders in as well.) - Bake for about 30 minutes, until the tops have some golden brown color.

We liked these! There was a reasonable amount of berry to the topping.
The first batch had a very wet dough that I could not roll, so I sort of squished together. They looked like this:
