I bought some feta, and I had some frozen flounder I wanted to use. So we had Flounder with Feta and Tomatoes for dinner tonight with roasted red peppers!
Ingredients:
- 12 ounces flounder filets, thawed
- ½ teaspoon kosher salt
- ¼ teaspoon white pepper
- 2 tablespoons extra virgin olive oil, plus more for drizzling over the finished dish
- 1/2 cup Vidalia onions, diced
- 1/2 teaspoon garlic powder
- 2 tomatoes, diced
- 1/2 teaspoon dried basil
- 1 teaspoon dry oregano
- 2 cups kale, sliced and shredded
- 4 ounces feta cheese, crumbled
Instructions:
- Preheat oven to 350 degrees F.
- Spray a foil-lined baking dish with non-stick cooking spray.
- Check the fish for bones by running your fingers over the top - remove any you find.
- Place the fillets face up in the dish.
- Sprinkle fish lightly with the salt and pepper.
- In a large pan, heat 2 tablespoons of the olive oil over medium heat, add the onions and cook for three minutes until softened.
- Add the garlic and tomatoes along with the thyme and oregano - cook for three more minutes, stirring.
- Add the kale and cook until the skale is wilted, about two more minutes.
- Spread the vegetable mixture over the fish, and top with the crumbled feta cheese.
- Bake uncovered until the fish is cooked and begins to flake, about 15 minutes, depending in thickness of your fillets.
- Cook under broiler for two minutes to slightly brown the top of the feta.
