It was a long week - I decided to make something chocolate for Emily. I made Triple Chocolate Scones (chocolate scones with chocolate chips and Nutella chocolate icing...)
Ingredients:
Scones:
- 2 cups (241g) All-Purpose Flour
- 2/3 cup (74g) White Whole Wheat Flour (or all-purpose)
- 1/3 cup (28g) unsweetened cocoa powder
- 1/2 teaspoon espresso powder, optional for flavor and color
- 1/2 cup (99g) granulated sugar
- 1 tablespoon baking powder
- 1/2 teaspoon baking soda
- 3/4 teaspoon salt
- 8 tablespoons (113g) butter, cold, cut into small chunks
- 1 1/2 cups (170g) semisweet or bittersweet chocolate chips
- 1 teaspoon vanilla extract
- 1 large egg
- 3/4 cup + 2 tablespoons (198g) milk
Chocolate Glaze:
- 1/2 cup powdered sugar
- 4 teaspoons unsweetened cocoa powder
- 2 tablespoons milk
- 2 tablespoons Nutella
Instructions:
- Preheat oven to 375°F. Line a large baking sheet (13 x 18) with parchment paper.
- In a food processor, mix all the dry ingredients together except for the chocolate chips.
- Add the butter chunks to the food processor, and pulse until the mixture is crumbly.
- In a medium-to-large bowl, whisk together the vanilla, egg, and milk.
- Add the dry ingredients + the chocolate chips to the wet ingredients, stirring together until the mixture is evenly blended.
- Mix 3 tablespoons confectioners' sugar with 1 teaspoon cocoa powder, and sprinkle it on the parchment-lined baking sheet.
(This helps keep the scones from sticking to the pan as you shape them.) - Divide the dough in half.
- Pat each piece into about a 6" circle, each about 3/4" thick.
- Cut 8 wedge-shaped pieces with a bench scraper, pressing down firmly without sawing.
(It may help to dip scraper in flour after each cut.) - Cut the dough quickly, without twisting or sawing so the dough is sheared cleanly - this allows the scones to rise higher.
- Separate the scones maybe 1/2" , but keep them in a circle. Leave about 1" between them at the outer edge of the circle.
- Bake for about 18 minutes, until a toothpick inserted into the center of one comes out clean.
- Place scones on a wire rack to cool.
- In a small bowl, whisk together powdered sugar, cocoa powder, Nutella, and milk until smooth.
- Dunk the tops of the cooled scones into the glaze. The glaze should set up in 10 to 15 minutes.

We liked these! We tried them without the glaze:and with the glaze -- we liked the glaze version better!
