I wanted some quick sourdough hamburger rolls, so made these.
Ingredients:
- 1 tablespoons active dry yeast
- 2 teaspoons sugar
- 1 ounce warm water
- 8 ounces sourdough starter
- 1 tablespoon vegetable oil or room temperature butter
- 1 egg, mixed then divided (half for the dough, half for sticking on the seeds)
- 1/2 teaspoon salt
- 6.25 ounces whole wheat flour
- 1 tablespoon of water
- 1 tablespoon of sesame seeds
Instructions:
- Mix the water, sugar, and yeast together in the bowl of a stand mixer. Let rest for a few minutes to proof, and measure out the other ingredients.

Mix in the oil, half the egg, and salt, then mix in sourdough starter.
(Mix the other half off with 1 tablespoon of water, and place to the side for later.) - Mix in the flour, then knead for 5 or so minutes to form a smooth dough.

Spray the wells of a 6 well mini tart pan with cooking spray.
(The pan will help the rolls have a nice shape.) - Divide the dough into 6 even pieces.
- Flatten each dough ball with the palm of your hand until it's about 3" across, about the width of the mini tart pan well.
- Place each bun in the well of the mini tart pan.
- Cover and let rise until noticeably puffy, about 30 minutes.
- Toward the end of the rising time, preheat the oven to 400°F.
- Brush the buns with the egg wash, then sprinkle with sesame seeds.
- Bake the buns for 10 to 12 minutes, until golden.
- Remove them from the oven.
- If desired, brush with a little melted butter so the tops stay soft.
