I wanted a salad to go with last night's left overs, and I was out of greens. So I made a Tomato Avocado and Artichoke Salad for our second kitchen renovation dinner.
Ingredients:
- 2 medium tomatoes, cut into 1/2" chunks
- 1 avocado, cut into 1/2" chunks
- 6 ounces marinated artichokes, cut into pieces (maybe 10 - 12 pieces)
- 1 roasted red pepper, cut into 1/2" chunks
- 2 ounces mozzarella cheese, cut into small pieces
- 1/4 cup fresh basil, cut in thin slices
- 2 or 3 stems of green onion
- 1 tablespoon olive oil
- 1 tablespoons balsamic vinegar
- 1/2 tablespoon honey
- optional - 1 tablespoon marinade from artichokes
Instructions:
- Add the the basil and green onion to a medium bowl. Stir together.
- Add the tomatoes, avocado, artichokes, bell peppers, and cheese to a medium bowl. Gently fold together.
- Mix the oil, balsamic vinegar, honey, and marinade together to blend in honey.
- Pour over the salad, and gently fold together.
