Ingredients:
- 1/2 large Vidalia onion, sliced thin (about 1.5 cups)
- 1 bell pepper, sliced
- 1 cup chicken or vegetable stock
- 2 cans (~15-ounces each) of white beans, rinsed and drained, or 3 cups cooked white beans
- 2 large garlic cloves, sliced thin (or 1 teaspoon granulated)
- 1/2 teaspoon black pepper
- 1 teaspoon each dry basil and oregano
- 3/4 pound bulk sweet or spicy Italian sausage (3 links from Costco)
- 1 bunch of kale, center rib removed, and leaves roughly chopped
(fill in with spinach as needed, maybe 8 ounces total?) - optional - 1 - 2 teaspoons of apple cider vinegar
Instructions:
- Heat the olive oil in an Instant Pot over high heat, and sauce the onions and peppers for a few minutes.
- Add the stock, beans, and spices - mix in with the onions and peppers. Place the sausage on top.
- Pressure cook at High for 15 minutes (add a few minutes if the sausage is frozen), and use a slow natural release for 5 minutes, then Quick release.
- Add kale/spinach, and stir. Cover the pan, and let simmer for 2 minutes.

We liked this! I thought I had enough for dinner tomorrow, but Doug ate seconds. We will share the leftovers with some add ons for lunch tomorrow.
