Alex mentioned that he and Joanne had made brownies, but we did not get dessert tonight.
I decided we needed brownies too, so I made some Almond Flour Brownies (lower carb!) in the air fryer. (We have no oven during the kitchen renovation...)
Ingredients:
- 1/4 cup coconut oil, melted
- 1/3 cup brown sugar (use 1/2 cup of sugar for a sweeter brownie)
- 1 egg
- 1/3 cup almond flour
- 3 Tbsp unsweetened cocoa
- 1/4 tsp baking powder
- 1/8 tsp salt
- 1/4 cup mini chocolate chips
- 1/4 cup chopped pecans, optional
Instructions:
- Preheat Air Fryer to 325 degrees F.
- Spray small 6" air fryer pan with nonstick cooking spray.
- In a medium bowl, mix together the coconut oil, sugar, and egg.
- Add in the dry ingredients and stir just until combined.
- Fold in the chocolate chips and diced pecans,
- Spread batter in the prepared pan.
- Place pan in Air Fryer basket, and baked for 13 minutes.
- Check for doneness - I cooked mine for 2 more minutes as 250.
- Remove from oven, and let cool on a rack for at least 5 minutes before serving.

We liked this! It makes a small pan of brownies, which also helps manage the carbs! (We will each get 2 brownies!)
