I wanted to use Herbert, my sourdough starter, so I decided to test the air fryer vs the toaster oven for pizza baking.

Ingredients:
- 1 teaspoon active dry yeast
- 1.25 ounces warm water (105° to 110°F)
- 1 teaspoon granulated sugar
- 5 ounces all-purpose flour
- 3/4 teaspoons kosher salt
- 1/2 tablespoon extra virgin olive oil
- 8 ounces sourdough starter (unfed from refrigerator)
- 4 ounces spaghetti sauce
- 25 - 30 pepperonis
- 4 ounces mozzarella cheese
- optional - bell peppers or onions, thinly sliced
Instructions:
- Mix the yeast and sugar into the warm water. Let stand a few minutes, or until the mixture gets foamy while you gather the other ingredients.
- Place the flour, salt and olive oil in a food processor bowl with the dough blade installed. Pulse to combine.
- Add the sourdough and yeast mixture to flour mix, pulse a few times until a dough ball forms.
- Run the processor for another minute or so to knead. Scoop dough onto a floured surface, knead a few minutes by hand. Roll dough into a ball. The dough will be slightly sticky.
- Oil a medium bowl with some cooking spray, place the dough in the bowl.
- Let the dough rise in a warm place for 45 minutes to 1 hour.
- As desired, put the dough bowl in a larger bowl of warm water get the dough rising faster.
- After the dough has risen, divide to make pizza. (I made one7.5" square air fryer pizza, and one 8" x 10" toaster oven pizza. You probably could make 3 in the air fryer, or 2 in the toaster oven)
- For the air fryer: Preheat to 400 degrees or highest setting.
- Roll out dough to a 7.5" square (or whatever fits in your air fryer.)
- Place the dough directly on the air fryer basket, and bake for 6 - 7 minutes to pre-bake the pizza.
(Times might vary depending on how thick the dough is.) - Remove air fryer basket from oven. Top dough with pizza sauce and lightly with cheese and toppings.
- Bake for another 5 - 7 minutes until the crust is brown and the cheese has melted. P
- For the toaster oven pizza: Preheat to 405 degrees or highest setting for baking.
- Roll out the dough into a 8 x 10" rectangle to fit the toaster oven tray.
- Spray the tray with cooking oil, and pat dough into place. Pre-bake for 6 to 7 minutes.
(Times might vary depending on how thick the dough is.) - Remove tray from oven. Top dough with pizza sauce and lightly with cheese and toppings.
- Place just the pizza back the oven, increase the temperature to toast, and for 8 - 10 minutes until the crust is golden brown.
Carole's Notes:
We like pizza - but neither pizza was not as crisp and crusty as we prefer. I've increased the pre-bake times to try for a better crust next time.However - we have homemade pizza without an oven during the kitchen renovation!
