Apple Kale Cheddar Salad

I was looking for a kale and cheddar recipe for a side dish, and found this salad.


Ingredients:

  • 2 cups very finely chopped curly kale (stemmed and washed)
  • 2 tablespoons coarsely chopped toasted almonds
  • 1 apple, cored & cut in 1/4-inch dice
  • 1 ounce Cheddar cheese, cut in 1/4-inch dice
  • 1 tablespoons apple cider vinegar (or lemon juice)
  • 1/2 tablespoon honey
  • 1/4 teaspoon salt 
  • 1/4 teaspoon garlic powder
  • 2 tablespoons olive oil

Instructions:

  1. Combine the kale, almonds, apple and cheddar in a large bowl.
  2. Whisk together the remaining ingredients in a small bowl.
  3. Pour over the salad, and toss well. 
  4. Let sit for 10 minutes or so so dressing can soften the kale.

Carole's Notes:

We liked this - the apple and cheddar were the main flavors. This recipe is sized for 2 goood portions, and has more cheese and apples than the source. I will make it again!
