Ingredients:
- 1/2 cup onion, finely chopped
- 1.5 cups kale, finely chopped
- 1 garlic clove finely chopped
- 1/2 cup feta cheese crumbled
- 1 tablespoon olive oil
- 2/3 cup almond flour
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 teaspoon mixed dried herbs (I used basil, oregano, parsley, garlic, and onion powder)
- 1 egg
- 1 tbsp olive oil
- 1 tablespoons cup milk
Instructions:
- Saute the kale, onion and garlic over medium heat in a tablespoon of olive oil until the onion softens. Season lightly with salt and pepper, and allow to cool.
- Whisk all the dry fritter ingredients together in a medium bowl.
- Preheat the air fryer for a couple of minutes at 400 degrees.
- In a separate bowl, whisk all the wet ingredients together.
- Pour the wet ingredients into the dry mix, and stir until just combined.
- Mix in the kale mixture and crumbled feta.
- Spray the bottom grill of the air fryer with cooking spray.
- Using a large cookie scoop, scoop out balls of the fritter dough into the air fryer, keeping them as separate as possible.
- Air fry for 8 - 10 minutes at 400 degrees, possibly rotating them.

We liked this! The fritters were light and tasty - especially if you like feta!I think if you cooked them the full 8 minutes they would stay together better - but hey, the steak was ready.
