I was looking for a healthish dessert, so made these.
Ingredients:
- 2 eggs
- 1/2 cup brown sugar
- 1/3 cup oil
- 1/2 cup creamy peanut butter
- 1 tsp vanilla extract
- 1 cup almond flour
- 1 cup oatmeal
- 1 tsp salt
- 1 tsp cinnamon
- 1 tsp baking powder
- about 3 ounces chocolate chips
Instructions:
- Preheat the oven to 350F. Prepare a brownie 9" x 9" pan with parchment paper.
- In a medium mixing bowl, add the eggs, sugar, oil, peanut butter, and vanilla. whisk until smooth.
- Add in the flour, oatmeal, salt, cinnamon, and baking powder. Fold through until a thick batter forms.
- Stir in the chocolate chip, the press batter to the prepared pan.
- Bake for 30-35 minutes or until the top is golden brown. remove from oven.
- Let cool completely before slicing into bars,
