Quick Sourdough Slider Rolls

We wanted some sliders for dinner, so I made up a half recipe of my Quick Sourdough Dinner Rolls

 

Ingredients:

  • 8 ounces (227 gr) sourdough starter
    (fed or non-fed, or 4 ounces water, 4 ounces flour)
  • 1 ounce (28 gr) lukewarm water
  • 1 tablespoon dry milk powder 
  • 1 tablespoons butter, room temperature
  • 1/2 tablespoon sugar
  • 1/2 teaspoon salt
  • 1/2 tablespoon yeast (instant preferred)
  • 126 g flour (~1 cups) All-Purpose Flour

Instructions:

  1. Stir together the water, milk powder, butter, sugar, and yeast in bowl of stand mixer. Let sit for 5 minutes or so, to let the yeast start to foam.
  2. Add about 2/3 of the flour to yeast mix, and knead with the dough hook until the dough forms a rough mass. 
  3. Add the rest of the flour, about a 1/2 cup at a time, and mix the dough hook until a smooth ball begins to form. Knead for 4 to 5 minutes until a soft, smooth ball of dough is formed. The dough should feel soft, elastic, and a bit tacky to the touch.
  4. Scoop out dough, lightly spray bowl with cooking spray, and place the dough back in the bowl.
  5. Also spray the top of the dough, then cover with plastic wrap. 
  6. Let the dough rise for 20 minutes or so at room temperature or until the dough is full and puffy.
  7. Form into 15 round balls (about 28 grs each)
  8. Place rolls into a lightly greased 13 x 9 pan in rows of 3 x 5. Cover pan, and let rise at room temperature for another 25 to 30 minutes, or until well rounded  and maybe starting to touch.



  9. Preheat oven to 350.
  10. Brush the rolls with a tablespoon or so of melted butter before placing in the oven.
  11. Bake the rolls for 20 to 25 minutes - they should be golden brown, and an internal thermometer reads 190°F. 
  12. Brush the baked rolls with melted butter again so they will stay soft.
