Ingredients:
- 8 ounces broccoli florets, fresh or frozen
- 2 eggs
- 1/2 cup almond flour
- 1 cup shredded cheese (I used cheddar)
- 1/4 cup minced onion
- 2 tbsp cilantro chopped, optional
- 1 clove garlic, minced
- 1 teaspoon basil
- 1 teaspoon oregano
- 1/2 teaspoon each salt and pepper
Instructions:
- Preheat oven to 400 degrees F and line a baking sheet with parchment paper or foil.
- If using fresh broccoli, steam or microwave until tender.
- If using frozen, thaw by running under cool water, and then pat dry.
- Chop broccoli in a food processor until finely minced.
- Add the eggs, almond flour, cheese, and spices. Whitt until well incorporated.
- Using a small cookie scoop, portion about 1 tablespoon of mixture and form into a ball.
- Place on lined baking sheet and spray or drizzle lightly with oil.
- Bake 25-30 minutes or until lightly golden and cooked through.
