I wanted a non-dairy frosting, so made this recipe.
Ingredients:
- 1/2 cup coconut oil
- 1 teaspoon grated tangerine or orange peel (zest of 1 tangerine)
- 5 to 6 teaspoons tangerine or orange juice (juice of 1 tangerine)
- 2 cups powdered sugar
Instructions:
- In a medium bowl, beat the cocount oil and grated zest until fluffy
- Beat in 1 cup of powdered sugar, add 1/2 of the juice.
- Beat in the second cup of powdered sugar, add in the rest of the juice.
- As needed, beat in a teaspoon or two of water at a time to thin the frosting
- Spread over cooled cupcakes.
