Chocolate Sourdough Cupcakes with Nutella Glaze

 I was feeling like round chocolate food today, so I tweaked some recipes and made cupcakes. 

Ingredients:

Cupcakes:
  • 12  ounces sourdough starter (or 6 ounces water + 6 ounces flour)
  • 1/4 cup coconut oil, melted
  • 1/2 cup canola oil
  • 3 eggs     
  • 2 teaspoons vanilla
  • 2.125  ounces All-Purpose Flour   
  • 1/2  cup cocoa powder
  • 3/4  cup sugar
  • 3/4 cup brown sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2  tsp salt
Chocolate Nutella Glaze:
  • 1 cup powdered sugar      
  • 3 tablespoons unsweetened cocoa powder
  • 4 tablespoons milk   
  • 4 tablespoons Nutella

Instructions:

  1. Feed your sourdough before you go to bed or early in the so you have 12 ounces of starter to use. Cover with kitchen towel.
  2. When you are ready to bake, preheat the oven to 350 degrees with 2 racks in the middle of the oven.
  3. Line 21 or 22 wells of two 12-well muffin pans with cupcake papers.
  4. In a medium bowl, mix together the oils, eggs and vanilla. Mix in the sourdough starter until well combined.
  5. Weigh the flour in  small bowl, mix in the other dry ingredients, and whisk until uniform. 
  6. Stir the flour/cocoa mix evenly into the sourdough/egg mix so there are no white spots.
  7. Using a 1/4 cup serving scoop or 1/4 cup measure, place one level scoop of batter into the the cupcake liners in the pans.
  8. Bake for 15 to 17 minutes
  9. Remove the cupcakes from pan after a couple of minutes, and let them cool on a wire rack.
  10. After the cupcakes have cooled, mix the powdered sugar and cocoa together in a small bowl.
  11. Melt the Nutella a bit in the microwave, and mix in the milk until smooth.
  12. Stir the Nutella mix into the powedered sugar mix, adding up to 1/4 cup more powdered sugar to thicken if needed.
  13. Spread each cupcake with some of the glaze. (It should harden up in 10 to 15 minutes on the cupcakes.)
