Cinnamon Apple Dutch Baby Casserole

 I wanted a breakfast recipe for 7, so decided to try a Cinnamon Apple Dutch Baby Casserole.
(This recipe will probably serve 4 or more, but I doubled the recipe below because we had Alex, Joanne, Ben, Brandi and mu mom with us.)

Ingredients:

Apple Filling:
  • 2 apples, thinly sliced (1/8" slices)
  • 3 tablespoons butter
  • 1 tablespoon sugar
  • 1/2 teaspoon cinnamon
Dough:
  • 1 cup all-purpose flour
  • 1 cup milk
  • 4 large eggs
  • 1/4 cup plus 2 tablespoons granulated sugar, divided
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 4 tablespoons unsalted butter, cut into 4 pieces
 

Instructions:

  1. Place the flour, milk, eggs, 1/4 cup of the sugar, vanilla, and salt in a blender or food processor fitted with the blade attachment. 
  2. Blend for 10 seconds, scrape down the sides, and then blend for another 10 seconds. The batter will be quite loose and wet.
  3. Leave the batter in the blender and set aside to rest 20 to 25 minutes.
  4. Meanwhile, arrange a rack in the middle of the oven. Place a 9x13-inch baking dish on the rack and heat to 425°F.
  5. After about 10 minutes, melt 2 tablespoon of butter in a large skillet over medium to medium-high heat. Add the apple, 1 tablespoon of sugar, and the cinnamon and toss well. 
  6. Saute the apple for 5 to 7 minutes until tender, tossing occasionally. 
  7. Whisk together the remaining 2 tablespoons sugar and cinnamon in a small bowl until evenly combined; set aside.
  8. Using oven mitts, remove the baking dish from the oven and place it on the stove. 
  9. Place the remaining 2 tablespoons of butter in the pan, tilt the dish to melt the butter and coat the bottom and sides of the baking dish. (Or use a pastry brush to coat sides.)
  10. Sprinkle 1/2 tablespoon of the cinnamon sugar over the bottom of the baking dish. 
  11. Pour the batter into the baking dish. Tilt the dish if needed so that the batter runs evenly to all sides.
  12. Sprinkle 1 tablespoon of the cinnamon sugar over the batter.
  13. Bake until the Dutch baby is puffed, lightly browned across the top, and darker brown on the sides and edges, 15 to 20 minutes.
  14. Sprinkle with the remaining cinnamon sugar and serve warm.
