I had other ideas for the honey Debby gave me, so I decided to make Almond and Honey Slice. (The original recipe is Australian, and calls these bar cookies a slice.)
Ingredients:
Base:
- 130 g (4.5 ounces) butter melted
- 130 gr (4.5 ounces) honey (or 150 gr about 5 ounces brown sugar)
- 230 gr (8.25 ounces) all purpose flour (use only 200 gr flour or 8 ounces with brown sugar)
- 100 gr (3.75 ounces) almond meal
Topping:
- 214 g (7.5 ounces) butter
- 100 g (3.75 ounces) honey
- 240 g (8 ounces) slivered almonds
Instructions:
- Make the Base: Preheat oven to 350F.
- Line 9 x 13" pan with parchment paper, and spray lightly with cooking spray.
- Mix all base ingredients in a small bowl until well mixed.
- Bake for about 14 to 16 minutes until golden and lightly set.
- Optional - Allow to cool while making the topping,
- Make the Topping: Place the honey and butter in a small pan on medium heat. Stir until the butter has completely melted and mixed into the honey.
- Simmer without stirring for 3 minutes until the mixture is frothy and has a light caramel color.
- Stir in the slivered almonds.
- Spread hot topping evenly on the cookie base.
- Bake at 350 for approximately 15 minutes until brown.
(I turned on the convention oven for this part.) - Cool completely in the pan, lift out with parchment, and then cut.
