Ingredients:
Dough:
- 1 cup (200 gr) granulated sugar
- 2 cups (250 gr) all-purpose flour
- 1 teaspoon baking soda
- 1.25 teaspoons cinnamon
- 1 large egg, lightly beaten
- 3/4 cup (170 gr) vegetable oil
- 1/4 cup (85 gr) honey
- 1 cup walnuts (115 gt), chopped
Glaze:
- 1 cup (130 gr) powdered sugar
- 1 teaspoon vanilla extract
- 1 tablespoon water
- 2 tablespoons mayonnaise (or Greek yogurt)
- optional - red and green sprinkles
Instructions:
- Preheat the oven to 350°F.
- In a large bowl, stir the sugar, flour, baking soda, and cinnamon until evenly mixed.
- Lightly beat the egg in small bowl, then stir in the vegetable oil, and honey,
- Stir into the flour mix, then add in the nutsn, stirring until the mixture is smooth.
- Spoon into either an uncreased 9 by 13-inch pan, or 24 cupcake liners in two cupcake tins.
- Bake until a toothpick inserted in the center comes out clean, about 20 minutes. for bars, and 15 minutes for cookies.
- While the bars/cookies are baking, make the glaze by stirting together the powdered sugar, vanilla, water, and mayonnaise until smooth and creamy.
- Spread onto the glaze onto the bars/cookies while they are still warm.
- Optionally sprinkle with red and green colored sugar to make more "Christmas-y"
- Store the bars/cookies in a sealed container.
