I wanted to try to make baked tater tots.
Ingredients:
- 1 pounds russet potatoes, cut in quarters or so
- a couple of tablespoons minced fresh onion (optional)
- 1 tablespoon all-purpose flour
- 1 teaspoon cornstarch
- 1 teaspoon garlic powder
- 1 teaspoon onion powder (or use fresh above)
- 1/4 teaspoon dried oregano
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
Instructions:
- Place potatoes on rack in Instant Pot with 1 cup of water. Pressure cook on high for 5 minutes, then quick release. Allow the potatoes to cool a bit.
- Use a large hand held grater to shred potatoes, peeling is optional. (maybe use a food processor?)
- Transfer potatoes to a large bowl.
- Mix flour and spices together.
- Sprinkle flour mix over the shredded potatoes, stir to evenly distribute flour. The mixture should be workable, but dry.
- Pre-heat air fryer to 400 degrees, or convection oven to 450 degrees.
- Use a small cookie scoop to portion half moons of potatoes. (Optionally roll slightly into log.)
- Spray portions with cooking spray on all sides.
- Place the tots in the bottom of the air fryer, and on a rack in the air fryer. (Or on a wire rack in a pan for the oven.)
- Bake for 10- 12 minutes until crispy on the outside,
