Tater Tots

I wanted to try to make baked tater tots.  


Ingredients:

  • 1 pounds russet potatoes, cut in quarters or so
  • a couple of tablespoons minced fresh onion (optional)
  • 1 tablespoon all-purpose flour
  • 1 teaspoon cornstarch
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder (or use fresh above)
  • 1/4 teaspoon dried oregano
  • 1/2 teaspoon salt 
  • 1/4 teaspoon pepper
 

Instructions:

  1. Place potatoes on rack in Instant Pot with 1 cup of water. Pressure cook on high for 5 minutes, then quick release. Allow the potatoes to cool a bit.
  2. Use a large hand held grater to shred potatoes, peeling is optional. (maybe use a food processor?) 
  3. Transfer potatoes to a large bowl. 
  4. Mix flour and spices together. 
  5. Sprinkle flour mix over the shredded potatoes, stir to evenly distribute flour. The mixture should be workable, but dry.
  6. Pre-heat air fryer to 400 degrees, or convection oven to 450 degrees.
  7. Use a small cookie scoop to portion half moons of potatoes. (Optionally roll slightly into log.) 
  8. Spray portions  with cooking spray on all sides.
  9. Place the tots in the bottom of the air fryer, and on a rack in the air fryer. (Or on a wire rack in a pan for the oven.)
  10. Bake for 10- 12 minutes until crispy on the outside,
