Ingredients:
- 1 cup (2 sticks or 8 ounces or 227 grams) cold unsalted butter
- 1 cup (7 ounces or 200 grams) white sugar
- 1 teaspoon (5 grams) baking powder
- 359 gram (12 5/8) all-purpose flour
- 1/4 teaspoon cinnamon
- dash of ginger (optional)
- dash allspice (optional)
- 1/4 teaspoon salt
- 1 large egg
- 1 large peach, peeled, pitted, and thinly sliced (about 1/8-inch thick)
- 1 or 2 kiwis, peeled, and thinly sliced
- 1 medium apple, peeled, coed, and thinly sliced
Instructions:
- Preheat the oven to 375°F (190°C).
- Spray a 9×13 inch pan with cooking spray.
- In a stand mixer bowl or food processor, whisk the sugar, baking powder, flour, salt and spices together.
- Cut the butter into pea sized chunks.
- Blend the butter and egg into the flour mixture into it forms large lumpy crumbs.
- Pour 3/4 of the crumbs into the prepared pan, and pat and press in firmly.
- Place fruit slices over crumb base.
- Scatter remaining crumbs evenly over the fruit and bake in preheated oven for 30 minutes, until the top is slightly brown and you can see some color around the edges.
- Cool completely in pan before cutting into squares.
