I was thinking of snowball cookies, but I wanted chocolate coconut ones. It turns our my recipe makes chocolate coconut snowflakes.
Ingredients:
- .5 cup (113g, one stick) unsalted butter softened
- 1 cup (226g) coconut oii
- .75 cup (90g) powdered sugar
- .5 cup (40g) unsweetened cocoa powder
- 1 teaspoon vanilla
- 3 cups (375g) all-purpose flour
- .5 teaspoon salt
- 1.25 cups (7.5 ounces, 190 grams) mini semi-sweet chocolate chips (I chopped up regular chips)
- Additional powdered sugar for rolling (about 1 – 1 1/2 cups)
Instructions:
- Pre-heat oven to 350°. Line three 13" x 18" baking sheets with Silpat mats or parchment paper.
- Mix butter, coconut oil, 1 cup powdered sugar, cocoa, and vanilla with a stand mixer until very well mixed in. (It won't get fluffy.)
- Mix salt in flour, then mix into cocohttps://www.crazyforcrust.com/double-chocolate-snowball-cookies/a mixuntil the dough comes together.
- Stir in the chocolate chips.
- If dough is too soft, chill it until you can work it easily with your hands.
- Scoop 1 tablespoon balls of dough (I used my small cookie scoop)
- and place on prepared cookie sheet.
- Bake cookies for 7-10 minutes until bottoms are just slightly brown and the tops are no longer glossy.
- Remove from oven and cool for 5-10 minutes, until you can handle them.
- Fill a small bowl with 1 cup powdered sugar and roll each cookie in the sugar until coated.
- Place on a rack to cool. (Once cookies are cooled, you can re-roll them in more powdered sugar.)
