We were trying for a simpler meal this year. Instead of sweet potato casserole, I made sweet potatoes in the Instant Pot.
Ingredients:
- 4 to 6 medium to small sweet potatoes
- 1 cup water
- sprinkling of cinnamon
Instructions:
- Scrub the potatoes with a brush until clean.
- Pour water into Instant Pot, then place steamer basket or rack in the bottom of the pan.
- Place sweet potatoes on top of the rack, stacking potatoes as needed.
- Secure the lid, set to pressure cook on high for 15 minutes.
- Allow pressure to “release naturally” for at least 10 minutes
(they will stay warm longer if your other sides are cooking.) - Slice open, sprinkle with a little cinnamon and serve.
