Ingredients:
- 2 cups sugar
- 1.5 cups water
- 24 oz fresh cranberries, rinsed, drained, and picked over
- 1 packet plain gelatin (optional)
Instructions:
- Dissolve sugar in water in a heavy pot on the stove om medium-high heat.
- Add the berries, stir.
- Bring to a boil, then turn down to a rolling boil.
- Cook for 10 to 15 minutes to thicken, stirring occasionally at first, then frequently as the berries start to burst.
- Stir in gelatin if using. (I added 1 packet, but it may not have been needed.)
- Let cool for 10 minutes or so.
- Use an immersion blender to smooth out the jelly.
- Pour into containers, and cool overnight in the refrigerator.
Carole's Notes:
Doug and I both liked this! This is pretty close to the recipe on the back of the Ocean Spray cranberry bag, as well as the taste and texture of the canned sauce.I used the 2 pound bag of cranberries from Costco, so added 1/2 cup more sugar.
The recipe is lightly adapted from https://www.rhubarbarians.com/how-to-make-jellied-cranberry-sauce/
