I felt like making oatmeal pancakes this morning, so I tried out this recipe.
Ingredients:
Pancakes:
- 1 cup old-fashioned rolled oats
- 1 cup milk (I used 1 cup water + 4 tablespoons powdered milk)
- 2 large eggs
- 1 tablespoon unsalted butter, plus more for cooking
- 1 tablespoon granulated sugar
- 2/3 cup all-purpose flour
- 2 teaspoons baking powder
- 1/4 teaspoon salt
- 1/4 teaspoon ground cinnamon (optional)
Berry Sauce:
- 1 cup frozen strawberries
- 1 cup frozen mixed berries
- 2 - 4 tablespoons sugar, or to taste
- 1 tablespoon corn starch (optional, to thicken)
Instructions:
- Mix rolled oats and milk together in a medium bowl. Let stand for 10 minutes for the oats to soften.
- Melt 1 tablespoon butter and allow to cool.
- Add the butter, 2 eggs, and 1 tablespoon granulated sugar to the oats, stirring to combine.
- Mix the baking powder and salt into the flour.
- Add the flour mix to the oatmeal mix, stir to combine.
- Let stand for 5 minutes more.
- Microwave berries until warm, cut the strawberries into smaller pieces. Taste, stir in sugar (and corn starch if using), and heat until thickened.
- Heat a large cast iron or nonstick skillet over medium-high heat.
- Grease the pan with 1 teaspoon butter
- Drop and spead 1/4 cup scoops of batter onto the pan.
- Cook about 3 minutes on the first side (until bubbles appear, the edges begin to look dry, and the bottoms are golden-brown)
- Flip the pancakes and cook until the other side is golden-brown, about 2 minutes more.
- Serve with berry syrup, berries, or regular syrup.

We liked this! I was looking for a healthier pancake with oatmeal in them, and these tasted fine, especially with the berry syrup!
This recipe makes about 9 pancakes, will serve about 2 people. (We had 2 spare pancakes)
