I tried out the new cookie roller roller on some Peanut Butter Brownie Roll-Out Cookies.

Ingredients:
3 cups (375 grams) all-purpose flour
3/4 teaspoon salt
1/2 teaspoon baking powder
1 cup (225 grams) lightly salted butter, softened (2 sticks)
1 1/2 (300 grams) cups sugar
2 large eggs
1 teaspoon vanilla extract
2/3 cup unsweetened cocoa
2 tablespoons PB2 (optional - provides a lot of peanut flavor)
Additional flour & cocoa powder for dusting (mix together and call it 'cocoa flour')
- Mix together flour, salt and baking powder in a medium bowl.
- In a mixer bowl, whip butter, sugar, eggs, vanilla and cocoa.
- (Add PB2 to wet ingredients)
- Add in dry flour mix in small additions, scraping bowl.
- Mix until smooth.
- Wrap and chill in refrigerator for at least one hour.
- Preheat oven at 350 degrees.
- Roll out cookie dough to about 1/8th inch think on a 'cocoa floured' piece of parchment paper.
- Cut into desired shapes - use cocoa flour to dust cookie cutters or roller
- Slide parchment onto baking sheet, cook for about 10 minutes until the edges are somewhat firm - the the centers will still be somewhat soft.
- Transfer to a wire rack to cool.
- Combine and rollout scraps, repeat from Step 8.
