Cooking challenge night - we have fresh pineapple, red peppers and onions. How about Sweet and Sour Chicken?
Ingredients:
1 pound boneless, skinless chicken breasts, cut into 1-inch chunks
salt and ground black pepper, to taste (1/4 teaspoon each?)
1/4 cup cornstarch
1 large eggs, beaten
1/4 cup vegetable oil
1 red pepper - cut in 1” pieces
1 onion - cut in 1” pieces
1 cup fresh pineapple chunks
1/2 cup sugar
1/2 cup apple cider vinegar
1/4 cup ketchup
1 tablespoon soy sauce
1/2 teaspoon garlic powder
2 Tablespoons corn starch
Instructions:
- Preheat oven to 325 degrees F. Spray a 9x13 baking dish with nonstick spray.
- Heat vegetable oil over medium high in a large saucepan until very hot and rippling.
- Place cornstarch, salt & pepper in a 1 gallon plastic storage bag. Toss chicken chunks in bag, toss to coat.
- Dip the chicken into the beaten eggs, them place about 1/3 into pan,
- Cook until golden brown one one is, about 30 seconds. Flip and cook other side.
- Place browned chicken in baking dish, repeat process with the rest of the chicken. Place chicken in oven,
- Make sauce by mixing together sugar, 2 tablespoons corn starch vinegar, ketchup, soy sauce and garlic powder in a large bowl. (Set aside for a bit.)
- Renove chicken from over, pour sauce around chicken, and return chicken in oven.
- Saute onions and peppers for 7 to 10 minutes until peppers show some caramelization.
- Remove chicken from oven, mix in veggies and pineapple chunks,
- Place into oven and bake until the sauce has thickened, about 15 minutes

Serve over rice, perhaps with extra pineapple on the side.
Doug thought it was a bit too sour, Alex thought it was a bit too sweet. I think it hit the mark as sweet and sour.
