This year I am making some Ukranian desserts. Yabluchnyk (Ukrainian Apple Cake) was one of them.
Ingredients:
3 large apple - peeled, cored and thinly sliced
(use Fuji or some non-"Delicious-named" apple)
2 tablespoons butter(use Fuji or some non-"Delicious-named" apple)
1/2 cup brown sugar
2 tablespoons flour
2 teaspoons ground cinnamon
1 1/2 cups all-purpose flour
1/4 cup white sugar
1/4 teaspoon salt
2 teaspoons baking powder
1/2 cup cold butter diced small (1/4" squares or so)
1 egg, lightly beaten
1/3 cup evaporated milk
Instructions:
- Preheat oven to 350 degrees F.
- Lightly butter (PAM) an 8 cup petite loaf pan. (Or an 8 x 8 pan)
- Mix apples with rest of topping, microwave for 3 to 4 minutes to pre-cook, stirring together.
- Mix 1.5 cups of flour, sugar, salt, and baking powder in food processor,
- Cut in 1/2 cup of butter until the mixture is crumbly.
- Beat egg, stir in milk, then by handle mix by milk and egg into the flour until a soft dough has formed.
- Press dough into prepared wells on baking pan. (About 2 large cookie scoops per cavity)
- Layer the apples into the dish overlapping, in neat rows. Spoon over remaining juices from topping.
- Bake in preheated oven about 18 - 20 minutes. (Bake about 25 minutes in 8 x 8 loaf pan)
My notes - The pre-cooking of apples ensures they are soft. The cake rises, it is less sweet than most American cakes, somewhat like a soft sweetened scone. I liked it!
