Yabluchnyk (Ukrainian Apple Cake)

I've been baking treats for  the WPPC Global Christmas Market. Mine are targeted treats help raise money for my friend Audrey's ministry (Transition Orphan Assistance Foundation).
This year I am making some Ukranian desserts. Yabluchnyk (Ukrainian Apple Cake) was one of them.




Ingredients:


3 large apple - peeled, cored and thinly sliced
      (use Fuji or some non-"Delicious-named" apple)
2 tablespoons butter
1/2 cup brown sugar
2 tablespoons flour
2 teaspoons ground cinnamon
1 1/2 cups all-purpose flour
1/4 cup white sugar
1/4 teaspoon salt
2 teaspoons baking powder
1/2 cup cold butter diced small (1/4" squares or so)
1 egg, lightly beaten
1/3 cup evaporated milk

Instructions:


  1. Preheat oven to 350 degrees F.
  2. Lightly butter (PAM) an 8 cup petite loaf pan. (Or an 8 x 8 pan)
  3. Mix apples with rest of topping, microwave for 3 to 4 minutes to pre-cook, stirring together.
  4. Mix 1.5 cups of flour, sugar, salt, and baking powder in food processor,
  5. Cut in 1/2 cup of butter until the mixture is crumbly. 
  6. Beat egg, stir in milk, then by handle mix by milk and egg into the flour until a soft dough has formed. 
  7. Press dough into prepared wells on baking pan. (About 2 large cookie scoops per cavity)
  8. Layer the apples into the dish overlapping, in neat rows. Spoon over remaining juices from topping.
  9. Bake in preheated oven about 18 - 20 minutes. (Bake about 25 minutes in 8 x 8 loaf pan)


My notes - The pre-cooking of apples ensures they are soft. The cake rises, it is less sweet than most American cakes, somewhat like a soft sweetened scone. I liked it!
