This version of a lower carb pizza recipe using King Arthur Keto wheat flour and almond flour in my Breville air fryer. The recipe makes 2 thin crust 10” pizzas, each serves 2 people.
Ingredients:
- 8 ounces warm sourdough starter (or 4 ounces each water and all purpose flour)
- 2 teaspoons yeast
- 3 ounces almond flour
- 4.5 ounces Keto flour (+ 2 tablespoons all purpose flour as needed)
- 1 teaspoon Xanthum gum (optional)
- 1 teaspoon kosher salt
- 1 tablespoon olive oil
- 3 ounces water
- Favorite toppings - sliced thin! (we like pepperoni, sausage, bell peppers, onions, and olives)
- 3 ounces or so pizza sauce
- 4 ounces or so mozzarella cheese
Instructions:
- Make up pizza dough: combine starter, water, yeast, flours, salt, and oil in stand mixer.
- Knead for 4 to 5 minutes.
- Let rise for 60 minutes or so, will be close to double.
- Divide dough in two pieces. Roll out one piece dough as thin as possible on a piece of parchment paper about 10 inches in diameter to fit on the 10” pan. Let the rolled out dough rise about 30 minutes.
- Precook pizza crust: Select pizza setting, 470 degrees and 4 minutes with convection oven. After the oven preheats, bake the crust for 4 minutes.
- Remove crust from oven, add favorite toppings. Bake for another 8 to 10 minutes at 470 on pizza setting with convection oven until crust browns and cheese melts.
- Optionally, pre-bake second crust for another day.
Carole's Notes:
We liked this! I found this recipe did not spike my blood glucose. We also find that pre-baking the crust helps make the almond flour crust turn out more crunchy.Recipe is based on Lower Carb Pizza Crust adapted for our Breville air fryer toaster oven.
