Chocolate Almond Flour Cookies

I wanted to make some lower carb cookies.


Ingredients: 

  • 2 cups (200 gr) almond flour
  • 1/2 cup chocolate chips, mini or chopped up 
  • 1/2 cup walnuts, chopped
  • 1/2 tsp salt
  • 1/4 tsp baking soda
  • 1 Tbsp coconut oil, melted
  • 2 Tbsp warmed milk (warmed so coconut oil does not clump)
  • 1 egg, room temperature  
  • 1 tsp vanilla extract
      

Instructions:

  1. Preheat oven to 350 F. 
  2. Sift flour, cocoa powder, sugar, salt, and baking soda together.
  3. Whisk coconut oil, milk, egg together.
  4. Stir wet ingredients into dry ingredients. (If dough seems too wet, refrigerate for 30 minutes or so)
  5. Use large cookie scoop (about 2 tablespoons) and place on Silpat or parchment lined cookie sheet. (I wanted flatter cookies, so I press down the dough balls.)
  6. Bake  for 11 minutes, then let cool on pan.
  7. Let cool on tray before moving to a cooling rack
