I wanted to make some lower carb cookies.
Ingredients:
- 2 cups (200 gr) almond flour
- 1/2 cup chocolate chips, mini or chopped up
- 1/2 cup walnuts, chopped
- 1/2 tsp salt
- 1/4 tsp baking soda
- 1 Tbsp coconut oil, melted
- 2 Tbsp warmed milk (warmed so coconut oil does not clump)
- 1 egg, room temperature
- 1 tsp vanilla extract
Instructions:
- Preheat oven to 350 F.
- Sift flour, cocoa powder, sugar, salt, and baking soda together.
- Whisk coconut oil, milk, egg together.
- Stir wet ingredients into dry ingredients. (If dough seems too wet, refrigerate for 30 minutes or so)
- Use large cookie scoop (about 2 tablespoons) and place on Silpat or parchment lined cookie sheet. (I wanted flatter cookies, so I press down the dough balls.)
- Bake for 11 minutes, then let cool on pan.
- Let cool on tray before moving to a cooling rack
