Emily saw a recipe for S'More Cookie Bombs, and I made a new recipe version to use a cookie recipe I found, and cook in the air fryer. We are going to try it!
Ingredients:
Cookies:
- 15 sheets graham crackers (5" x 2.25" graham crackers or 2 cups graham cracker crumbs)
- 1/4 cup granulated sugar
- 2 tablespoons packed dark brown sugar
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 6 tablespoons unsalted butter, melted and cooled
- 1 large egg, lightly beaten
- 1/2 teaspoon vanilla extract
Filling:
- 12 marshmallows
- 12 pieces milk chocolate (or 5 or 6 chocolate chips per cookie)
- optional - small Reece's cups
Instructions:
- Process the graham crackers in a food processor fitted with the blade attachment until they are completely broken down into crumbs and have a sandy texture.
- Add the sugar, brown sugar, baking soda, and salt and whisk to combine.
- Whisk the butter, egg, and vanilla in a mixing bowl,
- Stir the dry ingredients into the wet ones with a rubber spatula until just combined into a soft dough.
- Using a large cookie scoop, measure 1 1/2 tablespoons of dough from the bowl.
- Roll between the palms of your hands to form a ball, then flatten to hold a marshmallow.
- Place a marshmallow and 5 or 6 chocolate chips in center of dough, and close dough around.
- Bake at 350 for 8 to 10 minutes in air fryer
- Let the cookies cool for 5 minutes, then use a flat spatula to transfer to them to a wire rack to cool completely.
Carole's Notes:
These were tasty. The ones cooked in the air fryer collapsed. The ones in the cupcake papers were more rounded.
