I was looking for a lower carb cookie, and made these. They are tasty!
Ingredients:
- 1 egg, lightly whipped
- 1/2 cup peanut butter
- 1/2 cup protein powder (64g) (I used 2 scoops of Chocolate Orgain Organic Vegan Protein Powder)
- 2 tbsp brown sugar
- 1/8 tsp salt
- 1/2 cup chocolate chips
- 1 cup old fashioned oats
Instructions:
- Preheat oven to 350 degrees,
- Mix egg and peanut butter together, then add sugar, salt, and protein powder.
- Stir until a dough forms.
- Add in chocolate chips and oats, stir until well combined.
- Use larger cookie scoop, portion out 14 to 15 cookie.
- Place on cookie sheet, pressing flat into cookie shapes.
- Bake at 350 for 10 to 12 minutes.

We like these! The cookies were not too sweet, and have maybe 4 to 5 grams of protein per cookie.The recipe is adapted from https://chocolatecoveredkatie.com/protein-cookies/ -- when I tried Chocoalte Covered Katie's recipe, the cookies never set. So I added an egg and some oats, and re-baked them.
