Ingredients:
- 1 cup almond flour
- 3.5 ounces sharp cheddar cheese. grated
- .5 ounces grated romano (or parmesan cheese)
- 1/2 teaspoon paprika
- 1/2 teaspoon tuneric
- 1/4 teaspoon onion powder
- 1/4 teaspoon garlic powder
- kosher salt to sprinkle on top
Instructions:
- Preheat oven to 375 degrees.
- Mix almond flour, cheese, and spices together in a food processor, pulsing several times to combine. (It should clump into a ball)
- Either press dough into a silicon goldfish mold, or roll out and cut into shapes.
- Sprinkle lightly with salt.
- Bake for 12 - 15 minutes until golden brown and crunchy.
- If using the silicon mold, it may help to pop them out of the mold at 12 minutes, and pit back in the oven to finish crisping up.

I also made a sourdough version from https://mostlysourdough.com/2022/01/sourdough-goldfish-crackers/ using 'older' feta and 1 teaspoon of diced rosemary (leaves from a 10" sprig).
Sourdough Goldfish Crackers Ingredients:
- 120 grams whole wheat flour
- 3 grams salt
- 1 grams turmeric powder (optional) (I used 1 teaspoon diced fresh rosemary from a 10" sprig.)
- 100 grams sourdough starter (can be active or discard)
- 55 grams unsalted butter, soft
- 225 grams sharp white cheddar cheese, shredded finely (I used feta)
- 1/2 teaspoon paprika
- 1/2 teaspoon tumeric
- 1/4 teaspoon onion powder
- 1/4 teaspoon garlic powder
- kosher salt to sprinkle on top
