I forgot to pick up sauerkraut for my reuben sandwiches at the store, so I made up a quick version using kale.
Ingredients:
- 1/2 cup water
- 1/2 cup distilled white vinegar
- ½ onion, sliced thin then chopped (about 1/2 cup)
- 3/8 teaspoon sea salt
- 1/2 teaspoon caraway seed
- 1/4 teaspoon onion powder
- 1/4 teaspoon garlic powder
- 1/8 teaspoon ground black pepper
- 3 leaves of kale, stem removed and julienned
Instructions:
- Combine water, vinegar, and onion in a pot over high heat; add sea salt, celery seed, onion powder, garlic powder, and black pepper.
- Add in kale, stir to combine.
- Bring to a boil, let simmer for 3 minutes.
- Cover and cook, stirring occasionally, over low heat until kale is wilted, a few minutes more.
