I was looking for a new lentil recipe, so I made GInger Chicken Lentils.
Ingredients:
- 1 tablespoon extra virgin olive oil
- 1 cup onion, diced
- 1 cup baby carrots, chopped
- 1 bell pepper, chopped
- optional - 2 stalks celery, chopped
- 1 teaspoon granulated garlic
- 2 teaspoon fresh ginger, finely grated
- 1/2 teaspoon ground turmeric
- 1/2 teaspoon smoked paprika
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
- 1 cup red lentils, rinsed well
- 3 cups water
- 2 cups chicken brith broth
- 2 frozen chicken breasts
- 1 cup of spinach, shredded
- optional - French fried onions as garnish
Instructions:
- Saute onions, peppers, carrots, and celery in oil in the Instant pot,
- Add garlic, ginger, spices - stir to combine.
- Stir in water and broth, then stir in lentils.
- Add frozen chicken breasts, submerge in the liquid.
- Seal the Instant Pot, cook on high pressure for 12 minutes.
- Once the cycle complete, allow the steam to release naturally for 10 minutes. Allow to quick release for the remainder.
- Remove chicken breasts, stir in spinach.
- Shred chicken, return to pot.
- Optional - Serve with french fried onions on top.
