My friend Carol gave me some star fruit, so I decided to dehydrate them to make some star fruit chips.
Ingredients:
- 3 medium to large star fruit
- 3 cups water
- 1 1/2 cups sugar
- 1 teaspoon ginger
- cinnamon for sprinkling
Instructions:
- Slice the star fruit into thin, even slices, about 1/8" or 1/4" thick or less.
- Knock out any seeds.
- In a large sauce pan over medium-high, dissolve the sugar in water and add the ginger.
- Bring it to a boil. Reduce the heat, add the star fruit, and simmer for a few minutes.
- Remove pan from the heat and allow it to sit for 20 minutes.
- Transfer the slice to the tray of a dehydrator, allowing the excess syrup to drip off before placing on the tray.
- Sprinkle lightly with cinnamon.
- Dehydrate at 135 degrees Fahrenheit for 10 hours
- They should become dry and crisp in the edges.
- Store in an airtight container.

The recipe is lightly adapted from https://www.suwanneerose.com/2016/12/star-fruit-chips/ - I could not get them to crisp up in the oven, so I used my dehydrator instead.
I want to try again without the sugar syrup bowl, perhaps just sprinkling with a little cinnamon and ginger.
