Ingredients:
Caribbean Green Seasoning:
- 1.5 cups (40g) chopped cilantro
- 1 cup (25g) roughly chopped parsley
- 1/2 cup chopped Vidalia onion
- 6 to 8 leaves Spanish thyme
- 3-4 tablespoons lemon jucie (or apple cider vinegar)
- 1/2 teaspoon minced ginger (or 1/4 teaspoon powdered)
- 1 teaspoon minced garlic (or 1/2 teaspoon powdered)
- 1/2 teaspoon salt, or to taste
- optional - chili to taste
- water as needed, perhaps about 1/4 to 1/2 cup
Chicken:
- 2 large boneless chicken breasts
Instructions:
- Whirr all the green seasoning ingredients except the water in a food processor.
- Add some water as needed to make mixture spreadable
- Brush tops of chicken with 2 tablespoons of green seasoning, let marinade for at least 30 minutes
- Grill chicken, serve with extra sauce on the side
