Chocolate Bacon Walnut Cookies

I decided I wanted to try bacon chocolate chip cookies, and sort of mixed two recipes together.


Ingredients:

Candied Bacon:
  • 8 slice precooked bacon
  • 1/3 cup (67 grams) brown sugar
Cookies:
  • 1 cup (200 grams) white sugar
  • .5 cup (100 grams) brown sugar
  • 1 cup softened butter (2 sticks, 227 grams)
  • 2 large eggs
  • 1.5 teaspoons vanilla extract
  • 2 cups (250 grams) all-purpose flour 
  • .75 cup (75 grams) cocoa powder
  • 1.5 teaspoon baking powder
  • 1.5 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1.5 cups (255 grams) semi-sweet chocolate chips
  • 1 cup walnuts (~110 grams), chopped
     
 

Instructions:

  1. Preheat an oven to 350 degrees F (175 degrees C).
  2. Place bacon on a wire rack on a foil lined sheet. Sprinkle brown sugar on top of bacon.
  3. Bake for 10-12 minutes, until the brown sugar sort of crystalizes on the bacon, and the bacon gets crispy. Turn off oven.
  4. Remove from oven and let cool. Once bacon has cooled chop it into about 1/4" square pieces.
  5. Beat the butter in a stand mixer until fluffy and smooth. 
  6. Beat in the sugar until smooth, then the eggs and vanilla extrac.
  7. Whisk flour, cocoa powder, baking soda, baking powder, and salt together in another bowl.
  8. Stir flour mix into the sugar/butter mix about 1 cup at a time - try to mix just enough to incorporate the flour.
  9. Stir in the chocolate chips and bacon - the dough will be stiff.
  10. Refrigerate for 15 to 20 minutes.  Preheat oven to 350 degrees F (175 degrees C) while dough is chilling.
    (I chilled my dough overnight, and it was too hard to scoop the next day. I let the dough warm up a bit before scooping. I will probably try just the brief chilling next time.)
  11. Drop large cookie scoops of dough onto the cookie sheets.
  12. Bake for 8 to 10 after light chilling, or 9 - 11 minutes for a longer chill in the preheated oven until the edges seem set - the middles will still be very soft.
  13. Let stand 4-5 minutes before transferring to wire racks to cool completely.
  14. The cookies will firm up after cooling, and maybe collapse a little.

 

Carole's Notes:

We liked these! I found that the bacon added just a small flavor note - I may skip the bacon in the future.  Doug really did not notice the bacon at all. The basic cookie was quite tasty, and I will make for Joanne someday.

This made about 50 cookies.
