I decided I wanted to make something with chocolate chip and sourdough. Here is the recipe I put together with some help from my mom.
Ingredients:
- 1.75 cup (210g) all-purpose flour
- 1/4 cup (50 grams) brown sugar
- 1/4 cup (50 grams) white sugar
- 1 tablespoon baking powder
- 3/4 teaspoon salt
- 8 tablespoons (113g, 1 stick) unsalted butter, cold and cut into thin pats
- 1 cup (6 ounces) semi-sweet chocolate chips, chopped
- 1/2 cup (3 ounces) craisins, chopped (I chopped in food processor with chocolate chips)
- 2 large eggs
- 1 cup (227g) sourdough starter, unfed/or fed
- 2 teaspoons vanilla
- 2 tablespoons coarse sugar (for sprinkling - optional)
Instructions:
- Preheat the oven to 425°F, with a rack in the upper third.
- Line two baking sheets with parchment paper.
- Whisk together the flour, baking powder, sugar, and salt.
- Work the butter into the flour until the mixture is unevenly crumbly.
(I squished the pats into small flakes with my hands) - Stir in the chocolate (and craisin if using) pieces.
- Mix the eggs and vanilla together in a small bowl, then mix in the starter.
- Gently stir the wet ingredients until the dough is cohesive. This is a wet dough.
- Using a large cookie scoop, fill and level, and place flat side on prepared pan,
- Place the cookie onto about 1" apart.
- Optionally chill the pan in freezer for 10 minutes, uncovered. (This will make them stay more rounded. Otherwise, just bake them.)
- Bake the cookie 12 to 13 minutes, until they're golden brown on the top.
- Remove cookies from pan, and cool on a wire rack. (Move the cookies after you take the pan out of the oven so the bottoms don't get too brown.)
Carole's Notes:
We all liked these - they were chocolate and delicious! The recipe is adapted from http://carolelikesroundfood.blogspot.com/2022/01/buttery-sourdough-biscuits.html and https://www.kingarthurbaking.com/recipes/mini-scones-recipe
