I decided to try an Instant Pot Pulled Pork recipe. It turned out fine!
Ingredients:
- 2 tablespoons packed brown sugar
- 2 teaspoons paprika (I used 1/2 smoky, 1/2 sweet)
- 2 teaspoons garlic powder
- 2 teaspoons onion powder
- 1 teaspoon salt
- 1 teaspoon pepper
- .5 teaspoon cumin
- .25 teaspoon cayenne (optional)
- ~3 pounds boneless pork roast, cut into 3 to 4 inch chunks
- .5 large onion, sliced thinly
- 2 tablespoons olive oil
- .5 cup apple cider vinegar
- 1 cups barbecue sauce
- 1 cup water
- .5 teaspoon Liquid Smoke (optional)
Instructions:
- Mix together the brown sugar with the spices in a small bowl.
- Rub the pork chunks with the spice mixture and set aside for an hour or so to marinate.
- Whisk together the apple cider vinegar, one cup of the barbecue sauce, and 3/4 cup of the water.
- Set your instant pot to the saute setting, add the olive oil and get it hot.
- Add half of the cubed pork to the pot, and saute for a minute or so per side, browning all sides.
- Remove the browned pork to a plate, and repeat browning with the remaining pork.
- Remove the second set of pork.
- Use the remaining ¼ cup of water to deglaze the bottom of the pot.
- Add all of the meat back in, along with onions, and the barbecue sauce mix back into the instant pot. Try to nestle most of the meat under the sauce.
- Close the lid and set to sealing.
- Cook on high pressure for 40 minutes.
- Once the time is up, allow the pressure to release naturally for 10 minutes, then do a quick release.
- Remove all the meat chunks an put on a cutting board.
- Remove about half of the remaining sauce and throw it away.
- Turn the Instant Pot to saute, and heat the remaining sauce for about 10 minutes to thicken. (Add a little flour slurry or corn starch slurry if you want.)
- Shred the meat with a fork.
- Stir meat back into the ticketed sauce, serve on rolls with pickles and thin onions, along with some extra barbecue sauce.Instant Pot
