Instant Pot Ribs

It's still Doug's birthday week, so I thought he should get some barbecue ribs. I came up with this thought kind of late in the day, so decided to try an Instant Pot recipe on some frozen ribs. This came together in about an hour.



Ingredients:

  • 1 racks of ribs (from Costco)
  • 1/4 cup barbecue rub
  • 1 cup water
  • 1/4 cup apple cider vinegar
  • 1/4 teaspoon liquid smoke
  • 1/2 cup Baby Ray's barbecue sauce (or your favorite sauce)   

Rub Ingredients:

  • 2 tablespoon brown sugar
  • 1 teaspoon smoked paprika
  • 1 teaspoon  paprika
  • 3/4 teaspoon black pepper
  • 3/4 teaspoon salt
  • 2 teaspoons chili powder
  • 3/4 teaspoon garlic powder
  • 3/4 teaspoon onion powder
  •      

Instructions:

  1. (If ribs are frozen, put 1 cup water and trivet in Instant Pot. Add in ribs, and pressure cook on High for 1 minute, then Instant Release.)
  2. Rub spice mix over meaty side of ribs. (You may not need all of it.)
  3. Place wire trivet rack in the bottom of the Instant Pot.
  4. Add water, apple cider vinegar and liquid smoke, stir to mix.
  5. Place the ribs upright, with the meat side facing out. If using one large rack of ribs, then circle them around the pot.
  6. Set Instant Pot to pressure cook on High for 27 minutes.
  7. then allow the pressure to naturally release for 15 min. After 15 minutes, use the quick release.
  8. Carefully move ribs to a large, foil-lined baking sheet and brush them with BBQ sauce.
  9. Broil them in the oven for 2-3 minutes to caramelize the sauce.

Carole's Notes:

We both liked these! The meat was quite tender. Doug likes the crusty part on ribs- so broiling afterwards is required!
