I bought some flounder fillets at Costco, so I thought we should have fish tonight.
Ingredients:
- 3 fillets Tilapia (about 15 ounces for 2 people)
- 0.25 tsp Kosher salt
- .5 tsp garlic powder
- 0.25 tsp Black pepper
- .5 teaspoon paprika
- 1 tsp lime zest
- 2 tablespoons mayonnaise
- 3 tbsp grated Romano cheese
- Lemon or lime
Instructions:
- Preheat the oven to 400 degrees F.
- Line a sheet pan with Silpat mat or parchment paper, and light mist with cooking spray.
- Place the fillets on the lined pan. Sprinkle with some lime juice.
- Mix spices together. Also sprinkle some additional spices on one side of the fillets. (Put this side down on pan.)
- Mix the spices in the mayo with the lime zest and 1/2 of Romano cheese.
- Spread mayo on each filet.
- Sprinkle remaining grated cheese on top.
- Arrange soft veggies in a single layer around the fish. (I used tomato wedges and rinsed canned green beans)
- Drizzle them with a little olive oil, then sprinkle with sea salt and black pepper. Sprinkle with some lime juice and cheese.
- Bake for 10-12 minutes, until the fish flakes easily with a fork. Squeeze with fresh lemon before serving.
