Sheet Pan Lime and Parmesan Flounder

I bought some flounder fillets at Costco, so I thought we should have fish tonight.



Ingredients:

  • 3 fillets Tilapia (about 15 ounces for 2 people)
  • 0.25 tsp Kosher salt
  • .5 tsp garlic powder
  • 0.25 tsp Black pepper
  • .5 teaspoon paprika
  • 1 tsp lime zest
  • 2 tablespoons mayonnaise
  • 3 tbsp grated Romano cheese
  • Lemon or lime

Instructions:

  1. Preheat the oven to 400 degrees F.
  2. Line a sheet pan with Silpat mat or parchment paper, and light mist with cooking spray.
  3. Place the fillets on the lined pan. Sprinkle with some lime juice.
  4. Mix spices together. Also sprinkle some additional spices on one side of the fillets. (Put this side down on pan.)
  5. Mix the spices in the mayo with the lime zest and 1/2 of Romano cheese.
  6. Spread mayo on each filet.
  7. Sprinkle remaining grated cheese on top.
  8. Arrange soft veggies in a single layer around the fish. (I used tomato wedges and rinsed canned green beans)
  9. Drizzle them with a little olive oil, then sprinkle with sea salt and black pepper. Sprinkle with some lime juice and cheese.
  10. Bake for 10-12 minutes, until the fish flakes easily with a fork. Squeeze with fresh lemon before serving.

We liked this! The flounder I bought is very thin - Doug thought the topping would be good on a thicker fish,
