I wanted soup for dinner, and I had thawed about 8 ounces of kielbasa last night. I used it in this Kielbasa, Bean, and Veggie Soup.
Ingredients:
- 1/2 Vidalia onion, chopped (or 1 regular onion chopped)
- 1 bell pepper chopped
- 1 cup chopped carrots
- 1 cup chopped celery
- 2 cans of beans, rinsed well (I used 14.5 ounces cans of chickpeas and black beans)
- 32 ounces chicken broth
- 8 ounces water
- 4 ounces lentils (optional)
- 8 ounces of kielbasa, cut into about chickpea sized pices
- 2 to 3 cups of spinach, sliced into thin ribbons
Instructions:
- Saute onions, bell peppers, carrots, and celery in the Instant Pot pan for about 5 minutes.
- Mix in beans, chicken broth, water, lentils (if using), and kielbasa.
- Set Instant Pot to pressure cook for 11 minutes.
- After cooking, use either quick release or natural release.
- Stir in spinach, and let spinach wilt for a few minutes.
- Serve with bread, such as this foccaccia.
