Since Joanne likes soup, I was looking for a Christmas leftover soup. I found a recipe for Stuffing Soup!
Ingredients:
- 1/2 Vidalia onion
- leftover chicken or turkey bones
- 4 cups chicken broth
- 2 cups water
- 2 stalks celery chopped (including leaves)
- 1/2 cup carrots, chopped finely (I sliced up some baby carrots)
- 3 cups leftover stuffing
- 1.5 cups cooked turkey (or chicken or ham), cut into 1/4" cubes pieces
- Optional - Up to 1 cup of leftover gravy
- 3 cups thinly sliced kale or spinach leaves
- salt and pepper to taste
Instructions:
- Preheat the oven to 400 degrees.
- Place the leftover bones in a shallow baking dish. Peel and chop onion.
- Roast the bones and onions for 20-25 minutes or until nicely browned, turning once.
- Remove the bones and onions from the pan and place in the Instant Pot with chicken broth. Pour a quarter cup of water into the roasting pan, then scrape out stuck on bits of meat. Add to the stock pot.
- Add chicken broth and water to the Instant Pot, pressure cook for 15 minutes.
- Let release naturally for 10 minutes after cooking is complete.
- Remove bones from the stock pot.
- Stir in stuffing, turkey/chicken, and leftover gravy, let heat up.
- Stir in the spinach/kale and let simmer for a few minutes.
- Add salt and pepper to taste as needed.
