Lime Garlic Salmon

I was planning to serve lobster bisque for dinner, so I wanted a mild fish to go with or in it. I had a couple frozen salmon fillets, and I found this Lime Garlic Salmon that worked out well.

Ingredients:

  • 2 tablespoons unsalted butter
  • 2 tablespoons honey
  • 1 teaspoon powdered garlic
  • 1 lime, juiced
  • 1 pound salmon (3 or 4 chunks from Costco bag)
  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon ground pepper
  • Lime slices (to serve)
  • 1/4 cup fresh chopped parsley , divided

Instructions:

  1. If using frozen salmon, partially thaw in cold water for 30 minutes or so.
  2. Remove salmon from packaging, fit into a container to mostly fill.
  3. Cover with 1 cup of milk, and let finish defrosting for 30 more minutes.
    (The milk bath will be dumped out later - it is to make the salmon less fishy tasting.)
  4. Preheat oven to 375°F with a rack in the middle of the oven.
  5. Line a small baking pan with a larger piece of foil.
  6. Melt the butter with the honey, garlic, lime juice, salt, and pepper in a bowl in the microwave (or in a port on the stove), whisking until well combined.
  7. Place the salmon onto foil lined pan, fold the foil up around it.
  8. Evenly pour the honey-lime mixture over the salmon.
  9. Sprinkle salmon with a tablespoons of parsley.
  10. Bake salmon until it is cooked through (about 15-18 minutes).
  11. Optionally broil salmon for 2-3 minutes on medium heat to brown the top.
  12. Sprinkle with additional parsley and serve with fresh lime slices.
 

Carole's Notes:

We liked this! The salmon had a light lime/honey flavor, and was not too fishy. (The last salmon we ate from the same batch tasted a bit too fishy for me.)


I would broil it if I was not planning to mix in in lobster bisque.
