I wanted something light for dinner for mself, so I decided to roast a chicken breast and some bell peppers in my Air Fryer for a fancy spinach salad.
Ingredients:
- 1/2 bell pepper, cut into chunks
- 1/2 medium onion, cut into chunks
- 1 chicken breast (I needed to thaw mine..)
- 1/4 teaspoon each salt, pepper, paprika, garlic powder, oregano, and basil
(or sprinkling of to cover the chicken breast)
- 1/8 cup shredded mozzarella
- 1 handful baby spinach
- 2 slices pre-cooked bacon
- 5 baby carrots
- 2 or 3 marinated artichokes pieces
Instructions:
- Spray bell pepper and onions with a little cooking spray, roast for 10 minutes or so while you get rest of ingredients together.
- Thaw chicken breast as needed.
- Pound chicken breast flat between two sheets of plastic wrap
(I used a rubber mallet)
- Sprinkle all over with salt, pepper, paprika, garlic powder, oregano, and basil
- Place spinach on the chicken breast
- Sprinkle lightly with mozzarella cheese
- Place bacon on top of cheese
Roll the chicken breast around filling, and bind together with toothpicks
Mist lightly with cooking spray.
- Remove peppers and onions from air fryer basket, place in small container and seal so they steam a bit more.
- Cook chicken in air fryer at 375 degrees for 13 to 14 minutes, flipping once halfway through.
(I put the peppers back in for more cooking then.)
- While chicken cooks, spread more spinach on a plate.
- Sprinkle with 5 or so shredded baby carrots, and with 3 diced artichoke pieces.
- Top salad with 1/2 of the bell peppers, and 1/2 of the onion.
- Cut chicken in half, and slice up one half to serve as salad topper.
(Make a second salad plate if you are serving two!)
Carole's Notes:
I liked this! I was using a large Costco chicken breast, so there is enough for another meal. You could also serve this as a main dish with a side salad.
