Here is a my very simple mashed potato recipe - serves two!
Ingredients:
- 2 potatoes
- 1 tablespoon butter
- splash of milk
- 1 wedge Mini Babybel cheese
Instructions:
- Wash, peel, and dice potatoes into 1/2" chunks.
- Place in a pot of salted water, and boil for 15 minutes or until a potato chunk falls apart under the pressure of a fork.
- Drain potatoes, place in pan back on stove.
- Stir in the butter, broken into a couple of pieces.
- Mash potatoes some, then add a splash of milk as well as salt and pepper to taste.
- Add in small slices of Babybel cheese, and finish mashing to consistency you like.

Doug liked these. I'm not usually a mashed potato fan, but they were tasty with a hint of cheese and with the
meatloaf we had for dinner.
