I was thinking of feta, chicken, and salad for dinner. Here's the recipe I made up.
Ingredients:
- 1/4 teaspoon - black pepper, kosher salt, paprika, basil, oregano, garlic & parsley
- 1 tablespoon dried onion (or slice and roast 1/2 of a sweet onion)
- dash of red pepper flakes
- 4 ounces Greek yogurt
- 1 tablespoon olive oil
- 1 tablespoon apple cider vinegar
- 8 ounces chicken breast
- 2 eggs, hard boiled
- 1 bell pepper cut in strips
- 1 cup carrots, sliced or ‘coins’
- 1/2 cup diced celery, sliced thinly
- 1/2 cup tomatoes, sliced
- 3 cups mixed lettuce pieces and spinach
- 1/2 cup crumbled feta
- 1 tablespoon milk
Instructions:
- Make a marinade of spices, yogurt, oil, and vinegar
- Place 2 tablespoons of marinade + 1 tablespoon of milk in a small cup, stir to make a dressing,
- Place the rest of marinade in a ziplock bag or other container with thinly sliced chicken.
(Mix chicken well to cover all sides with marinade.)
- Let chicken marinade for at least 30 minutes.
- Microwave pepper strips for 2 minutes to soften.
- Broil chicken in oven (or pan grill) with bell pepper strips for 7 to 10 minutes until cooked through.
- Mix veggies, lettuce, and spinach while chicken is cooking.
- Divide into large bowls or plates
- Add crumbled feta and mix in.
- Slice hard boiled eggs, sprinkle over greens.
- Add cooked chicken and bell peppers.
- Top with reserved dressing.
