Biscuit Ingredients:
- 1 cups all-purpose flour (or white whole wheat)
- 2 teaspoons baking powder
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
- 1/3 cup butter (diced or grated w/ box grater)
- 1 cup sourdough starter (8 ounces, what you would remove when feeding starter)
Roli Filling Ingredients:
- 2 cups chopped, cooked chicken meat (2 six ounce chicken breasts, or so)
- 1/2 cup chopped onion, lightly sautéed
- 1/2 cup chopped bell pepper, lightly sautéed (any color, red looks pretty
- 2 cups spinach (saluted lightly, at end of cooking onion)
- (optional - 1 cup broccoli - steamed lightly)
- 1 cup marinated artichokes, diced
- 1 cup shredded mozzarella cheese
- 1/2 cup feta, crumbled
- 2 teaspoon dried oregano
- 1 teaspoon dried basil
Instructions:
- Preheat oven to 400 degrees F
- Cover large cookie sheet with a sheet of parchment paper
- Make the biscuits: In a food processor, whir together the flour, baking powder, baking soda, and salt.
- Cut in the butter until the mixture resembles coarse meal.
- Mix in sourdough starter until dough pulls away from the side of the bowl.
- Dump dough onto a floured surface, and fold over about 10 times.
- Roll out about 3/16” thick. Cut into 16 triangles (to mimic biscuits from a can)
- Make the filling: Mix together the chicken, spinach, onions, bell pepper, cheese, and spices.
- Assemble: Place a large glass upside down in the center of the cookie sheet.
- Spread out biscuit triangles around the base of the glass, with pointy ends away from the glass (will look like a sun flower)
- Spoon the chicken mixture onto the thick part of each biscuit piece.
- Fold the pointy end of each biscuit piece over the top of the chicken mixture and tuck in towards the center.
- Remove glass from cookie sheet.
- Bake in preheated oven for 25 to 30 minutes, or until roll is golden brown
