I needed to post a vegetable recipe to show that sometimes I bake them. I made these to go with Doug's birthday dinner - slow cooked ribs and
Oat Wheat bread.
Ingredients:
- asparagus (maybe 1/2 a pound)
- olive oil
- 2 tablespoons butter
- 1 teaspoon soy sauce
- 2 to 3 teaspoons of balsamic vinegar.
Instructions:
- Preheat oven to 400
- Toss asparagus in olive oil, lightly sprinkle with Kosher salt
- Bake for 12 minutes or until tender
- While asparagus cooks, melt butter. Stir in soy sauce and vinegar.
- Pour sauce over the spears into the same hot pan and serve
Carole's Notes:
We liked this so much that when we ate leftover ribs we made the asparagus again.
